Looking to mix up your menu for the fall? Even though it seems like the best produce is available in the summer, there are a lot of great options for fall as well! Some vegetables are harvested twice (or more) a year, and they have better flavor in autumn. 

Butternut Squash 
If you’re looking for something simple, but tasty and nutritious, look no further! Peel it, scoop out the seeds and cube. Toss with some olive oil and put it on a cookie sheet. Add some pepper and roast until the squash is golden brown around the edges. 

Brussels Sprouts 
These delicious little veggies often get a bad rap. But they shouldn’t! There are so many ways to make them taste awesome. We love pan frying them with olive oil, garlic and prosciutto. Add some salt and pepper and serve them up!  

Chard 
One of our family’s favorites is actually chard. While the characters in the show “Parks and Rec” have some terrible things to say about the leafy green, we love it! We found an easy and delicious way to prepare it. Tear or cut the leaves from the stalk, then chop into one-inch strips. Put some olive oil in a pan and throw in some garlic and crushed red pepper. Add the chard and cook on low for about 3-4 minutes. 

Potatoes 
Alright, so potatoes are available year-round, and they may be more of a starch than a vegetable… but who doesn’t love potatoes? Our favorite way to cook potatoes is to slice them into thin circles. Throw them in a cast iron skillet or a foil pan, along with butter, onion slices and garlic. Put it all on the grill and cook to your liking (we love crispy!). Tip- use some cooking spray on the pan first.
