At home with more time around the kids, little ones may be both a reminder of the joys in our world and also a test of our patience. For parents looking to share in an activity with their children, check out the various ideas below from our Registered Dietitian Nutritionist.

 

Baked Parmesan Zucchini
Recipe from: www.damndelicious.net

Total time: 20 minutes
Yields: 4

Ingredients:
4 zucchini, quartered lengthwise

1/2 cup freshly grated Parmesan

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

Kosher salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoon chopped fresh parsley leaves

 

Instructions:

1. Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.

2. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.

3. Place zucchini onto prepared baking sheet. Drizzle with olive oil and sprinkle with Parmesan mixture. Place into oven and bake until tender, about 15 minutes. Then broil for 2-3 minutes, or until crisp and golden brown.

4. Serve immediately, garnished with parsley, if desired.

3-Ingredient Chocolate Covered Strawberry Frozen Greek Yogurt Bites
Recipe from: www.twohealthykitchens.com

Ingredients:

1/2 cup nonfat blended strawberry Greek yogurt (not fruit on the bottom yogurt)

3 1/2 tablespoons 100% fruit seedless strawberry jelly

4 teaspoons mini chocolate chips
 

Instructions:

1. In a medium bowl, combine yogurt and jelly.

2. Chop chocolate chips and add them to the yogurt mixture, stirring thoroughly.

3. Spoon mixture into molds, or dollop from a spoon onto a parchment-lined baking sheet. If using molds, tap gently on counter so the yogurt levels smoothly.

4. Add "popsicle sticks" if desired.

5. Freeze until solid. Unmold or peel from parchment immediately after removing from freezer, while still thoroughly frozen.

6. Serve immediately or return to freezer tightly wrapped or packaged in airtight containers.

Gretchen’s Make it Yourself Pizza Night

Using whole wheat Naan bread found at your local grocery store and a wealth of ingredients makes for a fun night when you need a break from cooking dinner. This is also an opportunity to introduce pickier eaters to some new foods!
 

Ingredients:

Enough pieces of naan bread for each individual

Choose your base: red sauce, pesto sauce

Choose your cheese: shredded mozzarella, fresh mozzarella, etc

Choose your toppings: leftover roasted vegetables, frozen veggies (corn, carrots, etc),

Pepperoni, chicken Sausage, etc.

 

Instructions:

1. With many of the ingredients being ready to eat, this meal comes together in about 15 minutes.

2. Warm pizzas in the oven at 400 degrees F for 10-15 minutes.
