Stuffed Pepper Soup

Fall is here and we are well into the season of sweaters.   Hopefully, you have found your mittens, scarves and wool socks along with your favorite warm blanket to snuggle with on the couch.   What could be more perfect than warm socks, a soft blanket, and a steaming cup of soup?   How about trying out this recipe?  I’ll be making this one with tomatoes I canned from my garden.  While I’m sure this could be made in a slow cooker, it’s nice to know that if you need a dinner plan in a pinch, this one cooks up quickly and simply.

Stuffed Pepper Soup
Ingredients:
• 2# ground beef
• 28 oz canned tomatoes
• 28 oz can tomato sauce
• 2 c. cooked rice (white or brown)
• 2 c. diced green pepper
• 2 beef bouillon cubes dissolved in 2 c hot water
• ¼ c brown sugar
• 1 ½ tsp salt
• ¼ tsp black pepper


Brown ground beef.  Combine all ingredients in a large heavy pot.  Bring to boil over medium-high heat, then decrease heat to low and cover.  Simmer slowly, 45-60 minutes while stirring often.   Serve with oyster crackers or shredded cheddar cheese on top.
Makes 4 qts of thick, hearty soup. 


Imagine coming indoors after a fun afternoon of playing in the leaves to a warm bowl of this soup.  Fall is a fabulous time of year!
